Pine buds, picked while still green and full of liquid, were fermented in turbinado sugar for an entire season. The result is a thick, heady syrup that is as dark as amber honey and has sweet flavors of maple and citrus with a balsamic, woody note similar to rosemary. Wonderful over sweet cheeses, as a glaze for meats, or as a base for the most amazing salad dressing in existence.
